- Healthy Carrot Ginger Soup
Ingredients-
- Olive oil – 2 tablespoons
- Ginger – 2 inches, finely chopped
- Onion – half, sliced
- Carrots – 3, chopped
- Water – 2.5 cups
- Salt – according to taste
- Mixed herbs – half teaspoons
- Pepper powder – half teaspoons
- Pumpkin seeds – a handful
- Mint – a handful
In a cooking bowl, mix 2 tablespoons of olive oil along with 2 inches finely chopped ginger and saute them until the mixture turns aromatic. Then add onion to this mixture and saute again until the mixture softens. Add 3 chopped carrots and saute everything once more for 2 minutes. Now add 2.5 cups of water and half a teaspoon of salt and stir everything well. After stirring, close the lid and wait until 3 whistles.
Now, drain off the water and let the mixture cool off completely. After that, blend it and turn it into a smooth paste. In a frypan, mix this paste with the water we drained earlier and keep on staring until this carrot puree starts boiling. Add half teaspoon mixed herbs, half teaspoon pepper powder, and 1/4th teaspoon salt and stir to mix it all into soup. Adjust the consistency according to your own needs. Add a handful of pumpkin seeds and mint for garnishing and your healthy carrot ginger soup is now ready.
2.Tomato Carrot Soup
Ingredients-
- Carrot – 1, peeled and chopped into chunks
- Tomatoes – 2
- Onion – half
- Water – 1 and a half cup
- Salt – according to taste
- Black pepper – according to taste
Take one big carrot, peel, and chop it into chunks. Take 2 medium size tomatoes and cut them into 4 pieces and take a half onion for flavor. Pressure cook all the vegetables with 1 and a half cups of water on low flame. Wait for one whistle and then switch off the gas, let the vegetables cool down completely, and then open up the lid.
Put these vegetables in a blender and then blend them thoroughly. Then sieve the blend to remove any lumps out of it to make it consistent. Now, add in the water that you used to pressure cook the vegetables and add salt and black pepper according to your own taste.
3.Beetroot And Carrot Soup
Ingredients-
- Butter – 1 tablespoon
- Bay leaf – 1
- Garlic – 2 clove
- Ginger- 1 inch
- Shallots – 2 halves
- Beetroot – 1.5 cups, chopped
- Carrot – 1, chopped
- Tomato – 1, chopped
- Salt – half teaspoon
- Water – 2 cups
- Black pepper – 1 teaspoon, crushed
- Cream – a few drops
- Mint leaves – 2-3
In a cooking bowl, saute a bay leaf into 1 tablespoon butter until it turns aromatic. Then add 2 garlic leaves, 1-inch ginger along with 2 halves shallots, and saute for 2 minutes. Now add 1.5 cups of chopped beetroots, 1 chopped carrot, and 1 chopped tomato, and saute for 2 minutes again. After that add half a teaspoon of salt and 2 cups of water and mix it all together and then close the lid and until 4 whistles.
Now, drain off the water and let the mixture cool off completely. Remove the bay leaf out of it and blend this mixture into the blender. In a frypan, add beetroot water to this blend. Stir to mix it well, add 1 teaspoon crushed black pepper and adjust the soup for consistency while boiling by stirring it. Serve it into a bowl and use a few drops of cream and 2-3 mint leaves for garnishing.
