Four slices of Canadian bacon
2 Tablespoon unsalted butter divided
1 Tablespoon minced scallion whites
1 Tablespoon all-purpose flour
¾ cup whole milk
½ teaspoon dijon mustard
2 oz American cheese,
diced Salt and Tabasco sauce to taste
Black pepper to taste
4 English muffins, toasted and buttered
Four slices tomato Sliced scallion greens
How To Make Egg Muffin Sandwich With Cheese Sauce
Step 1: Sear Canadian bacon in 1 tablespoon butter in a saute pan over medium heat until the edges curl 1 to 2 minutes per side; transfer to a plate and tent with foil. In addition, melt the remaining one tablespoon butter in the same pan, add scallion whites and cook for 1 minute.
Step 2: Flit flour and bake for 1 minute and slowly whisk in milk and Dijon, whisking constantly; bring to a simmer and cook for 2 or 3 minutes. Flutter in cheese until melted; spring with salt and Tabasco.
