Creamy Kale and Potato Soup

Ingredients:

  • 2 tsp extra virgin olive oil
  • 2 diced celery stalks 
  • 2 diced Carrots
  • 1 large diced Onion
  • 2 Garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ cup all-purpose flour
  • 6 cups vegetable stock
  • 4 large Potatoes, cut into 1-inch chunks
  • 1 bunch chopped Kale 
  • 1 can white beans, drained and rinsed
  • ½ cup heavy cream
  • Salt as taste
  • Freshly ground pepper

Preparation:

Heat a large soup pan and add olive oil on medium flame, add onions first and then add celery and carrots; cook until soft and golden. Now add salt, garlic, and thyme, cook until fragrant; Then sprinkle flour over vegetables and combine well. Add potatoes and vegetable stock, stir well and bring to a boil, after some time reduce flame and simmer, wait until potatoes are soft. Now add kale and beans, simmer again until everything is tender, add heavy cream after 5 minutes, remove soup from flame, serve hot with salt and pepper.

Potato Soup with Veggies and Rosemary

Ingredients:

  • 2 Potatoes, cut into bite-size
  • 1 cup Kale, chopped
  • 3 Medium Carrots, chopped
  • 3 Stalks Celery, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cup veg stock 
  • 2-3 cups water
  • 1 can white beans
  • 2 sprigs fresh rosemary, chopped
  • 1 tsp dried thyme
  • Salt as required 
  • Freshly ground pepper

Preparation:

Take a large pot and add 1 tbsp olive oil on medium heat; add onion, celery, carrot, garlic, rosemary, thyme, salt, and pepper, and mix well, cook for 8 minutes or until softened. Now add the potatoes and then the veg stock, mix well, bring to a boil, cook until potatoes are soft. Lastly, add the Kale along with the beans, continue cooking for 5 minutes, season with salt and pepper.

One-Pot Kale Potato Soup

Ingredients:

  • 1 Onion, chopped
  • 3 Garlic, minced
  • 3 Carrots, chopped
  • 3 Celery, chopped
  • Dried parsley, thyme, and oregano
  • 2 Potatoes, cut into bite-sized
  • 2 cup vegetable broth
  • 1 cup Kale

Preparation:

Add oil to a medium-sized nonstick pot, saute the onions first then add garlic, after some time add carrot and celery and saute for 6-7 minutes or until they are soft. Next, add dried parsley, thyme, and oregano; After a few minutes, add the potatoes and broth, bring to a boil, simmer for 5 minutes and check if the potatoes are soft. Transfer the soup to a blender jar and blend half of it. Put back to heat and then stir in the kale, add salt and pepper to season, serve with chopped green onions.
